Foi num livro de medicina que Luis Ortiz descobriu a história dos náuatles, povos indígenas descendentes das culturas do planalto mexicano. “Eram nómadas e tinham sempre com eles três coisas: raízes, algum tipo de armas e cinza. Quando havia alguma ferida, faziam uma mistura com as raízes e a cinza para ajudar a regenerar mais depressa. A partir dali começaram a pensar no que mais podiam fazer com aquilo”, conta o chef à Time Out.
